Custard Slice

Another one of my family favourite.  

3 cups flour
2 tsp baking powder
3/4 cup sugar
Pinch of salt
125g soft butter
2 eggs(beaten)
2tsp vanilla essence 
Cold milk as required

Rub butter into dry ingredients until it resembles breadcrumbs.
Add beaten eggs and vanilla essence. Make a soft dough with cold milk. Leave to rest for 1/2 hour.
Roll out into circles. Makes about 6 large biscuits.
Bake at 180 deg until light brown
Prepare 1 litre custard at medium consistency. Divide in 4 and colour in what ever colours you desire. In mine I used Red, Violet, green and one yellow (original colour of custard). When cooled down layer with biscuit. 
Take the last remaining biscuit and grate it one top. Leave in fridge overnight to soften and set.
